Sugar-Free and Flourless Almond and Vanilla Cake

Ingredients (makes approximately 8 servings):

  • 200g ground almonds
  • 4 large eggs
  • 100ml milk (or plant-based)
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1 pinch of salt

Nutritional information (per serving): ~180 kcal | 7g protein | 15g fat | 3g net carbs

Instructions:

Step 1: Preheat and prepare

Preheat the oven to 180°C (350°F). Grease a 20cm round cake tin or line it with parchment paper.

Step 2: Beat the eggs

In a large bowl, beat the 4 eggs with the vanilla extract until light and fluffy.

Step 3: Incorporate dry ingredients

Add the ground almonds, baking powder, salt, and milk. Gently mix until you have a smooth batter.

Step 4: Bake and cool

Pour the batter into the pan and bake for 25-30 minutes, until golden brown and a toothpick inserted into the center comes out clean. Let cool completely before removing from the pan.

Tips:

Use finely ground almonds for a better texture. Serve with unsweetened whipped cream or low-carb fruit. Store in the refrigerator for up to 5 days.
