Corn and Piloncillo Cookies 🌽🍪
Crunchy and Sweet Traditional Treats
Ingredients (makes approximately 20 cookies):
- 2 cups corn flour
- 1 cup grated piloncillo (unrefined cane sugar)
- 1/2 cup shortening
- 1/4 cup warm water
- 1 pinch of salt
- 1 teaspoon ground cinnamon

Instructions:
Step 1: Prepare the piloncillo
Finely grate the piloncillo and set aside.
Step 2: Mix dry ingredients
In a bowl, combine the corn flour, grated piloncillo, salt, and ground cinnamon.
Step 3: Incorporate shortening and water
Add the softened shortening and warm water. Knead until a smooth, manageable dough forms.
Step 4: Shape and Bake
Form small balls, flatten them, and place them on a baking sheet. Bake at 180°C (350°F) for 15-20 minutes, or until golden brown.

Tips:
Use butter at room temperature to make kneading easier.
