MOCHA SWIRL BROWNIE CHEESECAKE
Ingredients:
For the brownie layer:
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
For the cheesecake layer:
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup brewed coffee, cooled
- 2 tablespoons unsweetened cocoa powder
For the mocha swirl:
- 1/4 cup brewed coffee
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons granulated sugar
Instructions:
STEP 1: Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
STEP 2: To prepare the brownie layer, melt the butter in a medium saucepan over low heat. Remove from heat and stir in the sugar, eggs, and vanilla extract. Mix in the cocoa powder, flour, salt, and baking powder until just combined. Pour the brownie batter into the prepared springform pan and spread evenly.
STEP 3: For the cheesecake layer, in a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, brewed coffee, and cocoa powder until fully combined.
STEP 4: Pour the cheesecake mixture over the brownie layer in the springform pan.
STEP 5: To make the mocha swirl, whisk together the brewed coffee, cocoa powder, and sugar in a small bowl until smooth. Drop spoonfuls of the mocha mixture on top of the cheesecake layer and use a knife to gently swirl it into the cheesecake.
STEP 6: Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
STEP 7: Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
