• ½ cup sour cream

• 3 large eggs

• 1 tsp vanilla extract

• ½ tsp mint extract

• Green food coloring (optional)

• 1 cup semi-sweet chocolate chips

• ½ cup heavy cream

For Garnish:

• Whipped cream

• Chocolate shavings or curls

• Fresh mint leaves

 Directions:

1. Prepare the Crust:

Preheat your oven to 325°F (163°C). In a bowl, combine chocolate cookie crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.

2. Make the Cheesecake Filling:

In a large bowl, beat cream cheese and sugar until smooth and creamy. Mix in sour cream, then add eggs one at a time, mixing just until combined. Stir in vanilla and mint extracts. Add a few drops of green food coloring, if desired, to achieve a minty hue.
