Lemon Sugar Pound Cake Bites:
Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 4 large eggs
- 2 cups (250g) all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- Zest of 2 lemons
- 3 tbsp fresh lemon juice
- ½ tsp vanilla extract
- For the topping:
- ¼ cup (50g) granulated sugar
- 1 tsp lemon zest
Instructions:
1. Preheat oven to 350°F (175°C). Line a mini muffin pan or silicone mold with liners.
2. Cream butter and sugar: In a large bowl, beat the softened butter and sugar until light and fluffy.
3. Add eggs: Beat in eggs one at a time, mixing well after each addition.
4. Mix dry ingredients: In another bowl, combine flour, baking powder, and salt.
5. Combine: Gradually fold the dry ingredients into the butter mixture. Add lemon zest, lemon juice, and vanilla extract, mixing until smooth.
6. Fill molds: Spoon batter into prepared mini muffin pan, filling about ¾ full.
7. Bake: Bake 12–15 minutes, or until a toothpick inserted comes out clean.
8. Cool & top: Let cool slightly, then sprinkle with sugar and lemon zest while still warm for extra zing.
9. Serve: Enjoy your bite-sized lemon pound cakes with a cup of tea or coffee!
