Elegant White Chocolate Pistachio Cake

🛒 Ingredients
- 🧁 For the Cake
- 200 g all-purpose flour
- 100 g finely ground pistachios (unsalted)
- 1½ tsp baking powder
- ¼ tsp salt
- 150 g unsalted butter (softened)
- 180 g granulated sugar
- 3 large eggs (room temperature)
- 1 tsp vanilla extract
- 120 ml milk
- 120 g white chocolate (melted and slightly cooled)
- 🍶 For the White Chocolate Ganache Frosting
- 200 g white chocolate (chopped)
- 150 ml heavy cream
- 100 g butter (softened)
- 🌿 For Decoration (optional)
- Crushed pistachios
- White chocolate shavings
- Edible gold flakes (optional, for a luxury touch)
👩🍳 Instructions
🔹 1. Prepare the Cake Batter
Preheat oven to 180°C (350°F).
Grease and line an 8-inch cake pan.
In a bowl, whisk together:
Flour
Ground pistachios
Baking powder
Salt
🔹 2. Cream Butter & Sugar
In another bowl, beat butter and sugar until light and fluffy (3–4 minutes).
Add eggs one at a time, mixing well after each addition.
Stir in vanilla extract.
🔹 3. Combine & Add Chocolate
Add dry ingredients in batches, alternating with milk.
Fold in the melted white chocolate gently.
🔹 4. Bake
Pour batter into the prepared pan.
Bake for 30–35 minutes or until a toothpick comes out clean.
Let cool completely before frosting.
🍫 Prepare the Ganache Frosting
Heat cream until just simmering (do not boil).
Pour over chopped white chocolate.
Let sit 2 minutes, then stir until smooth.
Cool until slightly thickened.
Beat in softened butter until creamy and spreadable.
🎨 Assemble the Cake
If desired, slice cake into 2 layers.
Spread ganache between layers.
Frost the top and sides smoothly.
Decorate with:
Pistachios
White chocolate curls
Gold flakes
