Chocolate Cherry Swiss Roll

Ingredients:

For the Cake:

• 4 large eggs

• 3/4 cup granulated sugar

• 1 tsp vanilla extract

• 1/4 cup unsweetened cocoa powder

For the Whipped Cream Filling:

• 1 1/2 cups heavy whipping cream

• 1/4 cup powdered sugar

• 1 tsp vanilla extract

For the Filling and Decoration:

• 1 cup cherry pie filling or fresh pitted cherries

• 2 tbsp cherry liqueur (optional)

• 1/2 cup chocolate shavings or curls

• Fresh cherries for decoration

Directions:

1. Make the Chocolate Sponge Cake:

o Preheat your oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper.

o In a mixing bowl, beat the eggs and sugar together using an electric mixer on high speed for about 5 minutes, until the mixture becomes thick and pale.

o Gently fold in the vanilla extract and sifted cocoa powder, being careful not to deflate the batter.

o Spread the batter evenly into the prepared pan and bake for 10-12 minutes, or until the cake springs back when lightly touched.

2. Roll the Cake:

o While the cake is still warm, turn it out onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper.

o Gently roll the cake up in the towel, then let it cool completely in this rolled-up shape. This will help it maintain its form.

3. Make the Whipped Cream Filling:

o In a chilled bowl, combine the heavy cream, powdered sugar, and vanilla extract.

o Whip until stiff peaks form.

4. Assemble the Cake:

o Carefully unroll the cooled cake. Spread a generous layer of whipped cream over the cake, leaving about a 1/2-inch border around the edges.

o Scatter the cherry pie filling or fresh pitted cherries on top. For extra flavor, drizzle some cherry liqueur over the cherries.

o Gently roll the cake back up, seam-side down.

5. Decorate:

o Spread any remaining whipped cream over the outside of the roll.

o For the classic Black Forest look, decorate with chocolate shavings or curls and fresh cherries.

6. Chill and Serve:

o Refrigerate the roll for at least 1 hour to set. Once ready, slice and enjoy the delicious layers of chocolate, cream, and cherries!
