Chocolate & Mixed Nut Loaf Cake
Ingredients
- 200g Dark chocolate
- 100g Butter
- 3 Eggs
- 80g Sugar
- 50g Flour
- 1 handful Pecans or walnuts
- 1 handful Whole almonds
- 1 handful Cashews
Preparation
Prep the Oven: Preheat your oven to 180°C.
Melt: Melt the dark chocolate and butter together using a double boiler (bain-marie) or in the microwave until the mixture is smooth and glossy.
Whisk: In a large bowl, whisk the eggs and sugar together until the mixture lightens slightly in color.
Combine: Gently pour the melted chocolate mixture into the egg mixture and stir until combined.
Fold: Sift in the flour and mix again until you have a smooth, homogeneous batter.
Fill: Pour the batter into a cake tin (loaf pan) that has been greased with butter or lined with parchment paper.
Topping: Decoratively arrange the walnuts, almonds, and cashews on top of the batter, pressing down very lightly so they stick.
Bake: Bake for approximately 25 to 30 minutes. The center should remain slightly moist to ensure a fudgy texture.
Cool: Let the cake cool completely before removing it from the tin and slicing.
