Chocolate & Mixed Nut Loaf Cake

​Ingredients

  • ​200g Dark chocolate
  • ​100g Butter
  • ​3 Eggs
  • ​80g Sugar
  • ​50g Flour
  • ​1 handful Pecans or walnuts
  • ​1 handful Whole almonds
  • ​1 handful Cashews

​Preparation

​Prep the Oven: Preheat your oven to 180°C.

​Melt: Melt the dark chocolate and butter together using a double boiler (bain-marie) or in the microwave until the mixture is smooth and glossy.

​Whisk: In a large bowl, whisk the eggs and sugar together until the mixture lightens slightly in color.

​Combine: Gently pour the melted chocolate mixture into the egg mixture and stir until combined.

​Fold: Sift in the flour and mix again until you have a smooth, homogeneous batter.

​Fill: Pour the batter into a cake tin (loaf pan) that has been greased with butter or lined with parchment paper.

​Topping: Decoratively arrange the walnuts, almonds, and cashews on top of the batter, pressing down very lightly so they stick.

​Bake: Bake for approximately 25 to 30 minutes. The center should remain slightly moist to ensure a fudgy texture.

​Cool: Let the cake cool completely before removing it from the tin and slicing.
