Chocolate Hazelnut Mousse Cake
Ingredients :
Chocolate sponge base :
- 150g all-purpose flour
- 100g granulated sugar
- 3 large eggs
- 25g cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp baking powder
Hazelnut mousse layer :
- 200g hazelnut spread (like Nutella)
- 300ml heavy cream, whipped
- 1 tsp vanilla extract
- 50g chopped roasted hazelnuts
Chocolate ganache topping :
- 200g dark chocolate, melted
- 150ml heavy cream
- 1 tbsp corn syrup
Decoration :
- 50g chopped chocolate bars
- 30g whole roasted hazelnuts
- Chocolate syrup drizzle
- Mini chocolate truffles or spheres
Preparation :
1. Preheat oven to 180°C. Line a 9-inch round pan with parchment.
2. Beat eggs and sugar until fluffy. Sift in flour, cocoa, and baking powder. Add vanilla.
3. Pour into pan. Bake 20–25 minutes. Cool completely.
4. Whip heavy cream with vanilla until stiff peaks form.
5. Fold in hazelnut spread and chopped hazelnuts gently.
6. Spread mousse over cooled sponge. Chill 1 hour.
7. Heat cream and corn syrup until simmering. Pour over chopped chocolate. Stir until smooth.
8. Pour ganache over mousse layer. Tilt pan to cover evenly. Chill 2 hours.
9. Decorate top with chopped chocolate, whole hazelnuts, chocolate syrup, and truffles.
10. Slice and serve chilled.
