Strawberry Jelly Cheesecake with Red Velvet Base

Ingredients :

  • Red velvet cake base:

  • 200g all-purpose flour
  • 20g cocoa powder
  • 200g sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 150ml buttermilk
  • 100ml vegetable oil
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1 tsp vinegar

  • Cheesecake layer:

  • 600g cream cheese
  • 150g sugar
  • 3 eggs
  • 200ml heavy cream
  • 1 tsp vanilla extract

  • Strawberry jelly topping:

  • 500g fresh strawberries
  • 100g sugar
  • 10g gelatin powder
  • 100ml water

  • Decoration:

  • Fresh strawberries
  • Whipped cream rosettes

Preparation :

1. Preheat oven to 180°C. Grease a 20cm springform pan.

2. Mix flour, cocoa, sugar, baking powder, baking soda, salt.

3. Whisk egg, buttermilk, oil, vanilla, red coloring, vinegar.

4. Combine wet and dry. Pour into pan.

5. Bake 25-30 minutes. Cool completely.

6. Beat cream cheese and sugar until smooth.

7. Add eggs one at a time. Mix in cream and vanilla.

8. Pour over cooled red velvet base.

9. Bake in water bath at 150°C for 60 minutes. Cool, then chill overnight.

10. Puree 300g strawberries with sugar. Strain.

11. Bloom gelatin in cold water. Melt into warm puree.

12. Pour jelly over chilled cheesecake. Refrigerate until set.

13. Decorate with fresh strawberries and whipped cream.
