Chocolate Strawberry Whipped Cream Cake

Ingredients :

  • Cake:

  • 250g all-purpose flour
  • 60g cocoa powder
  • 300g sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 240ml buttermilk
  • 120ml vegetable oil
  • 2 tsp vanilla extract
  • 240ml hot coffee

  • Filling and frosting:

  • 600ml heavy whipping cream
  • 100g powdered sugar
  • 2 tsp vanilla extract
  • 800g fresh strawberries

  • Decoration:

  • Extra whole and sliced strawberries

Preparation :

1. Preheat oven to 180°C. Grease and line three 20cm cake pans.

2. Whisk flour, cocoa, sugar, baking soda, baking powder, salt.

3. Add eggs, buttermilk, oil, vanilla. Mix until smooth.

4. Stir in hot coffee. Batter will be thin.

5. Divide batter into pans. Bake 25-30 minutes until toothpick clean.

6. Cool cakes completely.

7. Whip cream, powdered sugar, vanilla to stiff peaks.

8. Slice 600g strawberries thinly.

9. Place one cake layer on plate. Spread whipped cream.

10. Add layer of sliced strawberries. Repeat with second layer.

11. Top with third layer. Frost sides and top with remaining cream.

12. Decorate with whole and halved strawberries.
