Nutella Beignets

Ingredients
- For the Dough:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- For Filling:
- Nutella (about 1 cup)
- For Frying:
- Vegetable oil (for frying)
- For Dusting:
- Powdered sugar
Instructions
Prepare the Dough:
In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
In another bowl, mix the milk, eggs, melted butter, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until a dough forms. Do not overmix.
Chill the Dough:
Cover the dough with plastic wrap and refrigerate for about 30 minutes.
Roll Out the Dough:
On a lightly floured surface, roll out the dough to about 1/4 inch thick. Cut into squares (about 3x3 inches).
Fill with Nutella:
Place a small spoonful of Nutella in the center of each square. Fold the corners of the square over the filling to form a pocket and seal well by pressing the edges together.
Heat the Oil:
In a deep fryer or heavy pot, heat vegetable oil to 350°F (175°C).
Fry the Beignets:
Carefully drop a few filled beignets into the hot oil. Fry for about 2-3 minutes on each side, or until golden brown.
Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain.
Dust with Sugar:
While still warm, dust the beignets with powdered sugar.
