Double Mint Chocolate Oreo Drip Cake

Ingredients:

- 2 cups all-purpose flour

- 1 3/4 cups granulated sugar

- 3/4 cup unsweetened cocoa powder

- 2 tsp baking powder

- 1/2 tsp baking soda

- 1/2 tsp salt

- 1 cup milk

- 1/2 cup vegetable oil

- 2 large eggs

- 2 tsp vanilla extract

- 1 cup boiling water

- 1 cup mint chocolate chips

- 1 package Oreo cookies

- Green food coloring

- 1 cup chocolate ganache

- Mint leaves for garnish

Instructions:

1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.

2. In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt. Add milk, oil, eggs, and vanilla; beat on medium speed for 2 minutes.

3. Stir in boiling water until well combined. Fold in mint chocolate chips.

4. Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick inserted comes out clean. Let cool.

5. Crush Oreo cookies and mix with green food coloring. Spread between cake layers.

6. Pour chocolate ganache over the top of the cake, allowing it to drip down the sides.

7. Garnish with mint leaves and additional Oreo cookies.

8. Slice and enjoy this decadent mint chocolate delight!
