💭 What Is It?
A triple-layer dark chocolate cake filled with thick chocolate fudge, coated in creamy chocolate buttercream, and finished with a glossy ganache drip and optional toppings like brownies, truffles, or fudge cubes. This is not just dessert — it’s an experience.
⭐ Ingredients:
- For the Fudge Cake (3 layers, 8 or 9-inch pans):
- 2 cups all-purpose flour
- 3/4 cup Dutch-process cocoa powder
- 2 cups granulated sugar
- 1 tsp baking powder
- 2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup hot coffee (or hot water)
- For the Thick Fudge Filling:
- 1/2 cup sweetened condensed milk
- 1/2 cup heavy cream
- 8 oz semi-sweet or dark chocolate, chopped
- 1 tbsp butter
- Pinch of salt
- For the Chocolate Buttercream:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 3/4 cup cocoa powder (Dutch-process preferred)
- 1/3 cup heavy cream (adjust for texture)
- 1 tsp vanilla extract
- Pinch of salt
- For the Ganache Drip:
- 4 oz dark chocolate, chopped
- 1/2 cup heavy cream
- 1 tbsp corn syrup or butter (optional, for shine)
- Optional Over-the-Top Toppings:
- Brownie bites
- Fudge cubes
- Chocolate curls or shards
- Truffles
- Gold leaf or sprinkles
🧁 Instructions:
1. Bake the Cake:
Preheat oven to 350°F (175°C). Grease and line three 8-inch or two 9-inch cake pans.
Whisk flour, cocoa, sugar, baking powder, baking soda, and salt.
Add eggs, oil, buttermilk, and vanilla. Mix until smooth.
Stir in hot coffee. The batter will be thin.
Divide into pans and bake for 28–35 minutes. Cool completely.
2. Make the Fudge Filling:
Heat condensed milk and cream in a saucepan over medium-low.
Add chocolate and stir until melted and smooth.
Stir in butter and salt. Cool until thick but spreadable (like ganache).
3. Make the Buttercream:
Beat butter until creamy.
Sift in powdered sugar and cocoa. Mix on low, then add cream, vanilla, and salt.
Beat until fluffy and silky. Adjust cream if needed.
4. Assemble the Cake:
Place one cake layer on a board. Spread a thick layer of fudge filling.
Add second cake layer, more fudge filling.
Top with third cake layer.
Chill for 30 minutes before frosting.
5. Frost the Cake:
Use an offset spatula to frost with chocolate buttercream.
Smooth the sides or keep it rustic and swirled.
Chill again before adding ganache.
6. Make Ganache Drip:
Heat cream until steaming.
Pour over chocolate. Let sit, then stir until glossy.
Cool until slightly thick, then drip over the edge and spread over top.
7. Decorate (optional but encouraged):
Pile on brownie bites, truffles, fudge pieces, chocolate curls, or candy bars.
