Ingredients

  • All-purpose flour — 2 cups (250g)
  • Granulated sugar — 1 cup (200g)
  • Baking powder — 2 teaspoons
  • Baking soda — ½ teaspoon
  • Salt — ¼ teaspoon
  • Ground nutmeg — ½ teaspoon (for that classic donut aroma)
  • Unsalted butter, melted — ½ cup (115g)
  • Eggs — 2 large
  • Whole milk or buttermilk — 1 cup (240ml)
  • Vanilla extract — 2 teaspoons
  • Fresh or frozen blueberries — 1½ cups (200g)
  • Lemon zest — 1 teaspoon (optional but lovely)
  • For the Glaze
  • Powdered sugar — 1 cup (120g)
  • Milk — 1–2 tablespoons
  • Vanilla extract — ½ teaspoon

Instructions

Set your oven to preheat at 175°C (350°F), letting the warmth roll through the kitchen as you prepare the batter. A standard loaf pan or a round cake tin works beautifully—just grease it lightly so the cake releases like a dream later.

In a bowl, whisk the flour, sugar, baking powder, baking soda, salt, and that gentle touch of nutmeg. The fragrance feels warm and familiar, just like freshly baked donuts. In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla until everything blends into a silky mixture.

Pour the wet ingredients into the dry, and fold gently. Just before it all comes together, scatter in the blueberries and a whisper of lemon zest. Fold only until the batter looks thick, dotted, and irresistible—overmixing would steal some of its tenderness.

Scoop the batter into your prepared pan and smooth the top with the back of a spoon. Slide it into the oven and let it bake for 38–45 minutes, or until the top turns a golden donut-style brown and a skewer comes out clean with soft crumbs. Let it cool in the pan for about 10 minutes before turning it onto a rack.

While it cools, mix the glaze until it drips slowly from the spoon. When the cake is just slightly warm, drizzle the glaze over the top, letting it run down the sides like icing on a giant glazed donut.

Leave it to set—or slice while still warm if you can’t resist. Every bite is soft, buttery, gently spiced, and bursting with juicy blueberries, just like a donut transformed into a cake.
