Raspberry Frosted Medley Bliss Layers

Ingredients:

  • For the Cake Layers:

  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup whole milk
  • 1 cup raspberry puree (fresh or frozen raspberries blended)

  • For the Raspberry Frosting:

  • 1 cup unsalted butter, softened
  • 5 cups powdered sugar, sifted
  • 5 tablespoons raspberry puree
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons heavy cream (for desired consistency)

  • For the Filling and Decoration:

  • 1 cup fresh raspberries
  • ¼ cup raspberry jam
  • Edible flowers or mint leaves (optional for garnish)

Directions:

Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually mix the dry ingredients into the butter mixture, alternating with milk. Fold in the raspberry puree until well combined.

Divide the batter evenly among the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

For the frosting, beat the butter until smooth and creamy. Gradually add powdered sugar, one cup at a time. Mix in the raspberry puree and vanilla extract. Adjust the frosting consistency with heavy cream if needed.

Once the cakes have cooled, assemble the cake by placing one layer on a serving plate. Spread a thin layer of raspberry jam, followed by frosting, and a few fresh raspberries. Repeat with the remaining layers.

Frost the top and sides of the cake, smoothing the frosting for a neat finish. Decorate with fresh raspberries, edible flowers, or mint leaves. Chill for 30 minutes before slicing and serving.
