🛒 INGREDIENTS
For the Crust:
• 20 Oreo cookies, finely crushed
• 4 tablespoons butter, melted
For the Cheesecake Layer:
• 2 bars (8 oz each / 16 oz total) cream cheese, softened
• 1 cup granulated sugar
• 2 large eggs, room temperature
• 1/3 cup sour cream
• 2 teaspoons vanilla extract
For the Layers & Topping:
• 16 whole Oreo cookies (for the middle layer)
• 10 Oreo cookies, coarsely chopped (for topping)
👩🍳 INSTRUCTIONS
1. Prep the Oven & Pan: Preheat your oven to 350°F (175°C). Line an 8x8-inch or 9x9-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal later.
2. Make the Crust:
◦ In a food processor or ziplock bag, crush the 20 Oreo cookies into fine crumbs.
◦ Mix the crumbs with 4 tablespoons of melted butter until well combined.
◦ Press the mixture firmly and evenly into the bottom of your prepared baking dish.
3. Add the Middle Oreo Layer:
◦ Arrange the 16 whole Oreo cookies in a single layer right on top of the pressed crust.
4. Prepare the Cheesecake Filling:
◦ In a large bowl, beat the 2 bars of softened cream cheese and 1 cup granulated sugar together until smooth and creamy.
◦ Mix in the 1/3 cup sour cream and 2 teaspoons vanilla extract.
◦ Add the 2 large eggs one at a time, beating on low speed just until combined (do not overmix after adding eggs!).
5. Assemble & Bake:
◦ Pour the cheesecake mixture over the layer of whole Oreos and smooth out the top with a spatula.
◦ Sprinkle the 10 coarsely chopped Oreo cookies evenly across the top.
◦ Bake for 35–40 minutes, or until the edges are set and the center slightly jiggles when gently shaken.
6. Chill & Serve:
◦ Allow the bars to cool completely at room temperature.
◦ Transfer to the refrigerator and chill for at least 3–4 hours (or overnight) until firm.
◦ Use the parchment paper overhang to lift the cheesecake block out of the pan, slice into squares with a sharp knife, and enjoy!
💡 PRO TIP: Warm your knife under hot water and wipe it dry between cuts for perfectly clean slice edges!
