FLUFFY MILK SPONGE CAKE RECIPE
INGREDIENTS
• 2 cups all-purpose flour (250g)
• 1 cup granulated sugar (200g)
• 5 large eggs
• ½ cup melted butter (113g)
• ½ cup milk (120ml)
• 1 teaspoon vanilla extract (5ml)
• 2 teaspoons baking powder (8g)
• ¼ teaspoon salt (1g)
METHOD
Prepare the baking pan
Preheat your oven to 170°C. Grease a rectangular baking pan and line it with baking paper.
Mix the eggs and sugar
Break the eggs into a clean mixing bowl. Add the sugar and beat with an electric mixer until the mixture becomes pale, thick, and fluffy. This may take about 8–10 minutes, depending on your mixer.
Add the wet ingredients
Add the vanilla extract and melted butter. Mix gently until combined. Add the milk and mix briefly.
Combine the dry ingredients
Sift the flour, baking powder, and salt into a separate bowl.
Fold the flour into the batter
Gradually add the dry ingredients to the egg mixture. Use a spatula to fold gently until the flour is incorporated. Avoid overmixing so the cake remains light and fluffy.
Pour into the pan
Pour the batter into the prepared baking pan. Gently tap the pan on the counter to release large air bubbles.
Bake the cake
Bake at 170°C for approximately 30–40 minutes, or until the top is golden brown and a toothpick inserted into the centre comes out clean. Baking time will depend on the size of your pan and your oven.
Cool and cut
Allow the cake to cool in the pan for about 10–15 minutes. Transfer it to a rack to cool completely, then cut it into neat squares.
TIPS FOR A PERFECT SPONGE CAKE
• Use room-temperature eggs and milk.
• Beat the eggs and sugar thoroughly to incorporate enough air.
• Sift the flour to remove lumps.
• Fold the flour gently to avoid deflating the batter.
• Avoid opening the oven too early.
• Measure your ingredients accurately for the best results.
Storage: Store in an airtight container at room temperature for up to 2–3 days, provided the environment is cool. Refrigerate if necessary, but keep the cake covered to prevent it from drying out.
🍰 Enjoy your soft, fluffy homemade sponge cake!
