Homemade Zebra Marble Cake Recipe

  • Preparation time: 25 minutes
  • Baking time: 45–55 minutes
  • Oven temperature: 170°C
  • Yield: 1 medium cake

Ingredients

For the Cake Batter

 • 2 cups all-purpose flour (250g)

 • ¾ cup granulated sugar (150g)

 • ½ cup butter (113g)

 • 3 large eggs

 • ½ cup milk (120ml)

 • 2 teaspoons baking powder (8g)

 • 1 teaspoon vanilla extract (5ml)

 • ¼ teaspoon salt

For the Chocolate Batter

 • ¼ cup unsweetened cocoa powder (25g)

 • 3 tablespoons milk (45ml), extra if needed

For the Golden-Yellow Batter

 • Yellow food colouring, a few drops (optional)

Instructions

Prepare the Cake Pan

Grease a 7-inch or 8-inch round cake pan with butter and line the bottom with baking paper.

Preheat your oven to 170°C.

Prepare the Cake Batter

Cream the butter and sugar together until pale and fluffy.

Add the eggs one at a time, mixing well after each addition.

Stir in the vanilla extract.

In a separate bowl, combine the flour, baking powder, and salt.

Add the dry ingredients to the butter mixture in batches, alternating with the milk. Mix gently until you have a smooth batter. Do not overmix.

Divide the Batter

Divide the batter into two equal portions.

Leave one portion plain for the vanilla batter.

Mix the cocoa powder with 3 tablespoons of milk to form a smooth paste. Stir this paste into the second portion of batter until evenly combined.

If you want the golden-yellow colour shown in the picture, divide some of the vanilla batter into a third bowl and add a few drops of yellow food colouring.

You should now have vanilla, chocolate, and golden-yellow batters.

Create the Zebra Pattern

Spoon approximately 2 tablespoons of golden-yellow batter into the centre of the prepared cake pan.

Spoon 2 tablespoons of vanilla batter directly into the centre of the yellow batter.

Next, spoon 2 tablespoons of chocolate batter into the centre.

Continue alternating the batters, always pouring each new portion into the centre of the previous one. The batter will spread outward, creating concentric rings.

Keep repeating until all the batter has been used.

Important: Do not stir the batter or shake the pan excessively, as this can spoil the pattern.

Bake the Cake

Place the cake pan in the preheated oven and bake for approximately 45–55 minutes, or until a skewer inserted into the centre comes out clean.

If the top begins browning too quickly, loosely cover it with foil.

Remove the cake from the oven and allow it to rest in the pan for 10–15 minutes before transferring it to a wire rack.

Allow it to cool completely before slicing.

Tips for a Beautiful Zebra Pattern

 • Make sure all the batters have a similar consistency so they spread evenly.

 • Use equal quantities of batter for each layer.

 • Always pour each portion into the centre of the previous one.

 • Avoid overmixing the batter after adding the flour.

 • Use room-temperature eggs, butter, and milk for a smoother batter.

 • For a deeper chocolate flavour, use good-quality unsweetened cocoa powder.

Storage

 • At room temperature: Store in an airtight container for up to 2–3 days in a cool environment.

 • In the refrigerator: Store in an airtight container for up to 5 days.

 • In the freezer: Wrap individual slices well and freeze for up to 2 months.

Enjoy your soft, buttery, homemade zebra marble cake! 🍰
