Pink & Vanilla Wafer Biscuits
Ingredients
• 2 cups all-purpose flour (250 g)
• ½ cup cornstarch (60 g)
• ¾ cup butter or margarine (170 g), softened
• ½ cup icing sugar (60 g)
• ¼ cup milk (60 ml)
• 1 teaspoon vanilla flavour
• Pink food colouring
Instructions
Cream the butter and icing sugar together until smooth, light, and fluffy.
Add the milk and vanilla flavour, then mix well.
Add the flour and cornstarch gradually and mix until a smooth, soft dough forms.
Divide the dough into two equal portions.
Leave one portion plain and add a small amount of pink food colouring to the second portion. Knead each portion gently until the colour is evenly distributed.
Cover the dough and allow it to rest for about 15–20 minutes.
Roll out each dough portion on a lightly floured surface until moderately thin.
Use a wafer or textured rolling pin to create the beautiful criss-cross pattern.
Cut the dough into rectangles or your preferred shapes.
Arrange on a lined baking tray.
Bake in a preheated oven at 160°C for about 12–18 minutes, or until the edges are lightly golden. Avoid overbaking so the biscuits remain light in colour.
Allow the wafers to cool completely before stacking and serving.
