Marble Cake
A classic marble cake balances rich vanilla and deep chocolate batters swirled together in a moist, tender crumb.
Ingredients
Base Vanilla Batter
• Unsalted butter: 1 cup (225g), softened to room temperature
• Granulated sugar: 1 cup (200g)
• Large eggs: 4, room temperature
• Vanilla extract: 2 teaspoons
• All-purpose flour: 2 cups (250g)
• Baking powder: 2 teaspoons
• Salt: ½ teaspoon
• Whole milk: ½ cup (120ml), room temperature
Chocolate Swirl Addition
• Unsweetened cocoa powder: ¼ cup (25g)
• Warm milk: 3 tablespoons (45ml)
• Granulated sugar: 2 tablespoons (25g)
Instructions
1. Prepare the Oven and Pan
Prevents sticking and ensures an even rise
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter or non-stick spray, then line it with parchment paper, leaving an overhang on the long sides for easy removal.
2. Mix Dry Ingredients
Aerates and combines leavening agents
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
3. Cream Butter and Sugar
Builds structure and incorporates air
In a large bowl using an electric mixer, beat the softened butter and 1 cup of sugar at high speed for 3–4 minutes until light and fluffy.
4. Add Liquid Ingredients
Emulsifies the base batter
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract. Scrape down the sides of the bowl as needed.
5. Combine Wet and Dry
Prevents over-mixing and tough crumb
Alternate adding the flour mixture and ½ cup of milk to the butter mixture, starting and ending with the flour (3 additions of flour, 2 of milk). Mix on low speed just until combined. Do not overmix.
6. Create the Chocolate Batter
Ensures equal density between both batters
Transfer about 1⅓ cups (roughly one-third) of the vanilla batter to a separate bowl. In a small cup, stir the cocoa powder, 3 tablespoons of warm milk, and 2 tablespoons of sugar into a smooth paste. Fold this paste into the smaller portion of batter until fully dark.
7. Layer and Marble
Creates the distinctive swirled pattern
Dollop alternating spoons of vanilla and chocolate batter into the prepared loaf pan. Once all batter is in the pan, insert a butter knife or skewer deep into the batter and draw figure-eight patterns throughout the pan 3 to 4 times. Avoid over-swirling so the colors remain distinct.
8. Bake and Cool
Tests internal structure for doneness
Bake for 50 to 60 minutes, or until a wooden toothpick inserted into the center comes out clean or with a few moist crumbs. Cool in the pan for 15 minutes, then use the parchment overhang to lift the cake onto a wire rack to cool completely before slicing.
