Crispy Dried Fruit Bites with a Soft Center and Chocolate Coating

* 150 g all-purpose flour
* 80 g unsalted butter, softened
* 80 g sugar
* 2 eggs
* 60 g almond flour (or ground almonds)
* 1 tsp baking powder (approx. 5 g)
* 1 tsp vanilla extract
* Fine zest of 1 orange
* 50 g raisins
* 40 g dried cranberries or candied fruit
* 30 ml orange juice
* 1 pinch of salt

* 200 g dark baking chocolate
* 1 tbsp neutral oil or 15 g cocoa butter
☝️ For the decoration:
* 40 g pecans or walnuts, chopped
* Decorative gold sugar or coarse sugar, to taste
* A few extra pieces of dried fruit

1. Macerate the Dried Fruit
Takes about 15 minutes
* Place the raisins and dried cranberries in a small bowl.
* Add the orange juice and let them soak for 15 minutes.
* Drain thoroughly before adding them to the batter.
2. Prepare the Batter
* Preheat your oven to 170°C (340°F) conventional, or 160°C (320°F) fan-forced.
* In a mixing bowl, beat the softened butter and sugar together for 2 to 3 minutes until creamy.
* Add the eggs one at a time, followed by the vanilla extract and orange zest.
* In a separate bowl, whisk together the flour, almond flour, baking powder, and salt.
* Gradually fold the dry ingredients into the wet mixture.
* Gently mix in the drained dried fruit.
3. Bake the Cake
* Pour the batter into a square or rectangular baking pan lined with parchment paper.
* Spread it to an even thickness of about 2 to 3 cm (1 inch).
* Bake for 20 to 25 minutes until lightly golden and a toothpick inserted into the center comes out almost clean.
* Allow it to cool completely on a wire rack.
4. Shape and Chill the Bites
Chill for 20 minutes
* Slice the cooled cake into small squares or uniform pieces.
* Shape each piece into a small ball or slightly rounded disk.
* Refrigerate the bites for 20 minutes so they firm up and hold their shape.
5. Melt the Chocolate
* Chop the dark chocolate.
* Melt it gently in a double boiler over simmering water, taking care that no water enters the chocolate.
* Stir in the neutral oil or cocoa butter until completely smooth and glossy.
6. Coat, Decorate, and Set
Refrigerate for 30–45 minutes
* Dip each bite into the melted chocolate using two forks to coat evenly.
* Place them on a sheet of parchment paper or a wire rack.
* Before the chocolate sets, sprinkle with chopped pecans and decorative sugar.
* Refrigerate for 30 to 45 minutes until the chocolate shell is firm.
