¾ cup unsalted butter, softened

1¼ cups granulated sugar

3 large eggs

2 tsp vanilla extract

1 cup coconut milk

½ cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

½ cup sweetened shredded coconut

For the Frosting

8 oz cream cheese, softened

½ cup unsalted butter, softened

2½ cups powdered sugar

1 tsp vanilla extract

2–3 tbsp coconut milk

For the Topping

1½ cups sweetened shredded coconut, lightly toasted

👩‍🍳 Instructions

Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.

Whisk together flour, baking powder, baking soda, and salt.

Beat butter and sugar for 2–3 minutes until light and fluffy. Add eggs one at a time, then mix in vanilla.

Add the dry ingredients alternately with the coconut milk, mixing just until combined. Fold in the shredded coconut.

Divide the batter between the pans and bake for 25–30 minutes, or until a toothpick comes out with a few moist crumbs.

Cool in the pans for 10 minutes, then transfer to a rack and cool completely.

Make the filling: Beat cream cheese and powdered sugar until smooth. Add vanilla and heavy cream, then whip until thick and fluffy. Fold in the shredded coconut.

Place one cake layer on a serving plate. Spread an even layer of coconut cream over the top.

Add the second cake layer and gently press it into place.

Make the frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Add coconut milk until creamy and spreadable.

Frost the top and sides of the cake evenly.

Press toasted coconut over the top and sides.

Refrigerate for 1–2 hours before slicing.

🥥 Tip: Toasting the coconut until lightly golden gives the cake a deeper flavor and a beautiful finish.
