INGREDIENTS
Chocolate Cake Layers:
* 2 cups all-purpose flour
* 2 cups granulated sugar
* 3/4 cup unsweetened cocoa powder
* 2 tsp baking powder
* 1 1/2 tsp baking soda
* 1 tsp salt
* 2 large eggs, room temperature
* 1 cup whole milk
* 1/2 cup vegetable oil
* 2 tsp vanilla extract
* 1 cup freshly brewed hot coffee (or boiling water)
Chocolate Buttercream Frosting:
* 1 1/2 cups unsalted butter, softened
* 1 cup unsweetened cocoa powder
* 4 1/2 cups powdered sugar
* 1/2 cup heavy cream
* 2 tsp vanilla extract
* Pinch of salt
Garnish:
* 1/2 cup chopped chocolate curls or cocoa nibs
INSTRUCTIONS
* Prep: Preheat oven to 350°F (175°C). Grease three 8-inch round cake pans and line the bottoms with parchment paper.
* Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
* Add Wet Ingredients: Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.
* Add Coffee: Reduce speed and gradually stir in the hot coffee. The batter will be thin, but this ensures a super moist cake!
* Bake: Divide evenly among the prepared pans. Bake for 28–32 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
* Make Frosting: Beat the softened butter until creamy. Add cocoa powder, powdered sugar, heavy cream, vanilla, and salt. Beat on high speed for 2–3 minutes until fluffy and smooth.
* Assemble: Layer the cakes with buttercream in between. Frost the outside smoothly, press chopped chocolate around the bottom edge, and pipe decorative swirls on top with a star tip!
