Red Velvet Oreo Cheesecake
Ingredients
Oreo Crust
* Oreo cookies: 2 cups (200 g), crushed
* Melted butter: ½ cup (115 g)
Cheesecake Filling
* Cream cheese: 2 cups (450 g)
* Heavy cream: 1 cup (240 ml)
* Powdered sugar: ¾ cup (90 g)
* Vanilla extract: 1 tsp
* Gelatin (optional): 1 tbsp (10 g)
* Water: ¼ cup (60 ml)
Red Velvet Layer
* Red Velvet cake crumbs: 2 cups (200 g)
* Red Velvet cake slices: approx. 2 cups (250 g)
Red Berry Sauce
* Red berries or strawberries: 1½ cups (225 g)
* Sugar: ½ cup (100 g)
* Water: ¼ cup (60 ml)
* Cornstarch: 1 tbsp (8 g)
Decoration
* Oreo cookies
* Whipped cream
* Chocolate or berry sauce
Instructions
* Crust: Finely crush the Oreo cookies and combine with melted butter. Press the mixture firmly into the bottom of a springform pan lined with parchment paper. Chill in the fridge for 20 minutes.
* Cheesecake Base: Beat the cream cheese, powdered sugar, and vanilla together until smooth and creamy.
* Cream: In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture.
* Gelatin (Optional): Dissolve the gelatin in water, let it bloom, warm it gently until melted, and fold it into the cheesecake filling.
* Assembly: Spread a layer of cheesecake filling over the chilled Oreo crust. Add a layer of Red Velvet cake crumbs or slices, followed by another layer of cheesecake filling. Repeat until the pan is full.
* Sauce: Cook the red berries, sugar, and water in a saucepan until soft. Mix cornstarch with a splash of water, stir it into the berries, and cook until glossy and thickened. Let cool completely.
* Decorate: Spread a bit of the berry sauce over the cheesecake and top with whipped cream and Oreos.
* Chill: Refrigerate for 6 to 8 hours (or overnight) until fully set.
* Serve: Unmold carefully, slice, and drizzle generously with remaining berry sauce and chocolate sauce.
