Chocolate Lemon Marble Cake

Ingredients

 • 2½ cups all-purpose flour — 313g

 • 1½ cups granulated sugar — 300g

 • 1 cup butter — 227g

 • 4 large eggs

 • ½ cup milk — 120ml

 • 2 teaspoons vanilla extract

 • 2 teaspoons baking powder

 • ¼ teaspoon salt

 • Zest of 2 lemons

 • 2 tablespoons fresh lemon juice

 • ¼ cup cocoa powder — 22g

 • 2 tablespoons milk — 30ml extra for the chocolate batter

For the chocolate glaze

 • 1 cup chocolate — 170g

 • ½ cup heavy cream — 120ml

Instructions

Cream the butter and sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition. Add vanilla, lemon zest and lemon juice.

Sift together the flour, baking powder and salt. Add the dry ingredients gradually, alternating with the milk. Mix just until combined.

Divide the batter into two portions. Leave one portion as the lemon-vanilla batter.

Mix the cocoa powder and 2 tablespoons of milk into the second portion to create the chocolate batter.

Grease and line a round cake pan. Spoon the lemon and chocolate batters alternately into the pan, creating concentric circles.

Use a skewer or knife to gently swirl the batter into a beautiful marble pattern. Do not over-swirl.

Bake at 170°C (340°F) for about 40–50 minutes, or until a skewer inserted in the center comes out clean.

Allow the cake to cool completely before removing it from the pan.

For the glaze, gently heat the cream until warm, pour over the chocolate and allow it to sit briefly. Stir until smooth and glossy.

Pour the chocolate glaze over the cooled cake and create a swirl pattern on top.

Slice and serve. 🍋🍫🎂
