Lemon Loaf recipe
Ingredients
• All-purpose flour – 2 cups (250g)
• Granulated sugar – 1 cup (200g)
• Baking powder – 2 tsp
• Salt – 1/4 tsp
• Eggs – 2
• Milk – 1/2 cup (120ml)
• Vegetable oil – 1/3 cup (80ml)
• Lemon zest – 2 tbsp (from 1–2 lemons)
• Lemon juice – 1/4 cup (60ml)
• Vanilla extract – 1 tsp
For the glaze:
• Powdered sugar – 1/2 cup (60g)
• Lemon juice – 2–3 tsp
Instructions
Preheat the oven to 180°C (350°F). Grease a 9×5-inch loaf pan and line with parchment paper.
In a large bowl, combine flour, sugar, baking powder, and salt.
In another bowl, whisk together eggs, milk, vegetable oil, lemon zest, lemon juice, and vanilla extract until smooth.
Add the wet ingredients to the dry ingredients and gently fold until just combined. Do not overmix to keep the loaf tender.
Pour the batter into the prepared loaf pan and smooth the top. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool for 10 minutes in the pan, then transfer to a wire rack.
Mix powdered sugar and lemon juice to make the glaze and drizzle over the warm loaf. Let it set before slicing.
