Peanut Butter Caramel Chocolate Cheesecake

Ingredients:

Brownie Base:

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Chocolate Layer:
  • 4 oz chocolate chips
  • 1/4 cup heavy cream

Cheesecake Layer:

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

Topping:

  • 8 oz chocolate chips
  • 1/2 cup heavy cream
  • 1 cup caramel sauce
  • 4-6 peanut butter cups, chopped
  • 1/4 cup crushed peanuts or toffee bits

Preparation:

1. Preheat oven to 325°F. Grease a 9-inch springform pan.

2. Mix flour and cocoa powder for brownie base.

3. Combine melted butter, sugar, eggs, and vanilla.

4. Mix wet and dry ingredients until smooth.

5. Press brownie batter into bottom of pan.

6. Bake for 20 minutes. Cool slightly.

7. Melt chocolate chips with cream for chocolate layer.

8. Spread over brownie base.

9. Beat cream cheese and sugar until smooth.

10. Add eggs one at a time, then vanilla.

11. Fold in mini chocolate chips.

12. Pour over chocolate layer.

13. Bake for 50-60 minutes until center is almost set.

14. Cool completely, then refrigerate 4 hours.

15. Make ganache by melting chocolate chips with cream.

16. Pour ganache over chilled cheesecake.

17. Drizzle caramel sauce over top and down sides.

18. Top with chopped peanut butter cups and crushed nuts.
