Moist Chocolate Fudge Layer Cake

Ingredients:

  • For the Cake:

  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup hot water or hot coffee

  • For the Fudge Frosting:

  • 1 cup unsalted butter, softened
  • 3½ cups powdered sugar
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ cup heavy cream
  • 2 teaspoons vanilla extract

Directions:

Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.

In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, cream the butter and sugar until light and fluffy.

Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients alternately with buttermilk, mixing until just combined. Stir in hot water or coffee until smooth; the batter will be thin.

Divide the batter evenly between the prepared pans and smooth the tops. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Cool cakes completely on a wire rack.

For the frosting, beat the butter until creamy. Gradually add powdered sugar, cocoa powder, and salt. Add heavy cream and vanilla extract, beating until smooth and fluffy.

Spread a layer of fudge frosting over one cake layer, place the second layer on top, and frost the top and sides evenly.

Decorate as desired and allow the cake to set for 30 minutes before slicing.
