Cookies and Cream Layer Cake

Ingredients:

Chocolate Cake Base:

- 200g all-purpose flour

- 200g sugar

- 60g cocoa powder

- 2 tsp baking powder

- 1 tsp baking soda

- 1/2 tsp salt

- 2 eggs

- 200ml buttermilk

- 100ml vegetable oil

- 2 tsp vanilla extract

- 150ml hot coffee

White Cream Layer:

- 400ml heavy cream

- 300g cream cheese

- 150g powdered sugar

- 2 tsp vanilla extract

Cookies and Cream Layer:

- 300ml heavy cream

- 200g cream cheese

- 100g powdered sugar

- 15-20 chocolate sandwich cookies (crushed)

- Pink food coloring (optional)

Topping:

- 300ml heavy cream

- 2 tbsp powdered sugar

- Chocolate sandwich cookies for decoration

- Chocolate shavings

Preparation:

1. Preheat oven to 175C. Grease a round cake pan.

2. Mix flour, sugar, cocoa, baking powder, baking soda, and salt.

3. Add eggs, buttermilk, oil, and vanilla. Beat well.

4. Stir in hot coffee until combined.

5. Pour into pan and bake for 30-35 minutes.

6. Cool completely, then slice horizontally into 2 layers.

7. For white cream, beat cream cheese with powdered sugar and vanilla.

8. Whip cream to stiff peaks and fold into cream cheese mixture.

9. For cookies layer, repeat step 7-8.

10. Fold crushed cookies into half the cream mixture.

11. Add pink coloring if desired.

12. Place bottom cake layer on plate.

13. Spread white cream over cake.

14. Add cookies and cream layer on top.

15. Place top cake layer over filling.

16. Frost top with remaining plain cream.

17. Pipe whipped cream rosettes on top.

18. Decorate with cookie halves and chocolate shavings.

19. Refrigerate for 2 hours before serving.
