Citrus Nut Fruit Cake
Ingredients:
- 2 cups mixed dried fruits (apricots, raisins, figs)
- 1 cup chopped nuts (walnuts, almonds)
- 1 cup all-purpose flour
- 1/2 cup butter
- 1/2 cup brown sugar
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon orange zest
- 1/4 cup orange juice
- 1 cup icing sugar
- 2 tablespoons cream cheese
- candied orange slices for decoration
Instructions:
1. Preheat oven to 325°F (165°C) and grease a loaf pan.
2. Cream butter and brown sugar until light and fluffy.
3. Add eggs one at a time, beating well after each addition.
4. Mix flour and baking powder, then fold into the batter.
5. Stir in dried fruits, nuts, orange zest, and juice.
6. Pour into the pan and bake for 60-70 minutes.
7. Cool completely before removing from pan.
8. Mix icing sugar and cream cheese, spread over the cake.
9. Decorate with candied orange slices and serve.
