Butter Muffins 🧈🧁
Ingredients
All-purpose flour – 2 cups (250g)
Baking powder – 2 tsp
Salt – ¼ tsp
Unsalted butter – ½ cup (115g), softened
Granulated sugar – 1 cup (200g)
Eggs – 2 large
Vanilla extract – 1 tsp
Milk – ¾ cup (180ml)
Instructions
Cream the butter and sugar together until light and fluffy.
Beat in the eggs one at a time, then add the vanilla.
In a separate bowl, whisk together flour, baking powder, and salt.
Add the dry ingredients to the butter mixture in three parts, alternating with milk, and mix until just combined.
Line a muffin tin with paper liners and fill each cup about ¾ full.
Bake in a preheated oven at 180°C (350°F) for 18–22 minutes, or until golden and a toothpick comes out clean.
Cool slightly, then serve warm or at room temperature.
