Almond Cake Recipe
Ingredients:
- 2 cups all-purpose flour (240 g)
- 1 cup almond flour (100 g)
- 1 cup sugar (200 g)
- 1 cup unsalted butter, softened (225 g)
- 4 large eggs
- 1/2 cup milk (120 ml)
- 2 tsp baking powder (8 g)
- 1 tsp almond extract (5 ml)
- 1/2 tsp vanilla extract (2 ml)
- 1/4 tsp salt (1 g)
Instructions:
Start by preheating your oven to 350°F (175°C) and grease a round cake pan. In a large bowl, beat the softened butter and sugar together until the mixture becomes light, smooth, and fluffy. Add the eggs one at a time, mixing well after each addition. Pour in the almond and vanilla extracts and stir gently until combined.
In another bowl, mix the all-purpose flour, almond flour, baking powder, and salt together. Slowly add the dry mixture into the wet mixture while alternating with the milk. Stir gently until the batter becomes smooth and thick but still airy. Do not overmix so the cake stays soft and tender.
Pour the batter into the prepared pan and smooth the top with a spoon. Place the pan in the oven and bake for about 35–40 minutes, or until a toothpick inserted into the center comes out clean. When done, remove the cake from the oven and let it cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. You can serve plain, dusted with powdered sugar, or topped with sliced almonds.
