High-Volume Commercial Vanilla Cupcakes
Ingredients
- All-purpose flour – 6 cups (750 g)
- Granulated sugar – 4½ cups (900 g)
- Baking powder – 6 teaspoons
- Salt – 1½ teaspoons
- Margarine or butter – 2 cups (450 g)
- Eggs – 10 large
- Liquid milk – 3 cups (720 ml)
- Vegetable oil – 1½ cups (330 ml)
- Vanilla flavour – 2 tablespoons
Method
Cream the margarine and sugar until light and fluffy.
Add the eggs gradually, mixing well after each addition.
Mix in the oil and vanilla flavour.
In a separate bowl, combine the flour, baking powder, and salt.
Add the dry ingredients to the batter alternately with the milk, mixing just until smooth.
Line cupcake trays with paper cups.
Fill each cup about ⅔ full for flat, even tops.
Bake in a preheated oven at 170°C for 18–22 minutes or until a toothpick comes out clean.
Allow to cool completely before frosting or packaging.
