Double Chocolate Banana Swirl Cake

​The Ingredients

  • ​Banana Base

  • ​3 ripe bananas (mashed)
  • ​½ cup melted butter
  • ​¾ cup sugar
  • ​1 egg
  • ​1 tsp vanilla
  • ​1 ½ cups flour
  • ​1 tsp baking soda
  • ​Pinch of salt

  • ​Chocolate Swirl

  • ​¼ cup cocoa powder
  • ​2 tbsp sugar
  • ​1 tbsp melted butter

  • ​Topping & Mix-ins

  • ​½ cup chocolate chips (half for batter, half for topping)
  • ​1 fresh banana (sliced)

  • ​Ganache Glaze

  • ​½ cup semi-sweet chocolate chips
  • ​¼ cup heavy cream

​The Instructions

​1. Prepare the Batter

Preheat your oven to 350°F (175°C) and grease a loaf pan. In a large bowl, whisk the melted butter and sugar. Add the egg, vanilla, and mashed bananas. Mix until smooth. Gently stir in the flour, baking soda, and salt. Fold in half of your chocolate chips.

​2. Create the Swirl

In a small separate bowl, scoop out 1 cup of your banana batter. Mix in the cocoa powder, extra sugar, and 1 tbsp melted butter until it’s dark and chocolatey.

​3. Layer and Bake

Pour half of the plain banana batter into the pan. Drop spoonfuls of the chocolate batter on top. Finish with the remaining plain batter. Use a knife to gently swirl the batters together (don't over-mix!). Bake for 50–60 minutes, or until a toothpick comes out clean. Let it cool completely.

​4. The Finishing Touches

Ganache: Heat the heavy cream until it just starts to simmer, pour it over the chocolate chips, let sit for 2 minutes, then stir until glossy.

Assembly: Spread the ganache over the cooled cake. Press fresh banana slices into the wet chocolate and sprinkle the remaining chocolate chips around them.

​Pro Tips for that "Photo Look"

​Banana Slices: To prevent the fresh slices on top from browning quickly, brush them with a tiny bit of lemon juice or a clear honey glaze.

​The Swirl: For that deep chocolate pocket seen in the photo, keep your chocolate batter dollops large rather than thin.
