Citrus Muffins

Ingredients :

• 100 g Butter

• 180 g Sugar

• 2 Eggs

• 1 tsp Vanilla Extract

• Zest of 1 Orange

• Zest of 1 Lemon

• Juice of ½ Lemon

• 300 g Self-Rising Flour

• 200 ml Milk

Instructions :

Preheat the oven to 350°F (180°C).

Cream the softened butter and sugar together.

Add the eggs one at a time, beating well after each addition.

Add the vanilla extract, orange and lemon zest, and lemon juice, and beat to combine.

Add the sifted flour and milk, continuing to beat until you get a smooth, homogeneous batter.

Fill buttered muffin liners up to 2/3 full and bake for about 20 minutes.
