Sweet Potato Butter Cake Recipe

Ingredients:

- 1 cup unsalted butter, softened

- 2 cups granulated sugar

- 4 large eggs

- 1 1/2 cups mashed cooked sweet potatoes

- 2 1/2 cups all-purpose flour

- 2 teaspoons baking powder

- 1/2 teaspoon baking soda

- 1/2 teaspoon salt

- 1 teaspoon cinnamon

- 1/2 teaspoon nutmeg

- 1/4 teaspoon cloves

- 1 teaspoon vanilla extract

- 1/2 cup whole milk

Directions:

1. Start by preheating your oven to 350°F (175°C). Grease and flour a bundt or loaf pan.

2. In a mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.

3. Add the eggs to the mixture one at a time, ensuring you mix well after each addition. Then, gently fold in the mashed sweet potatoes and vanilla extract until everything is smooth.

4. In a separate bowl, combine the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Whisk these dry ingredients together.

5. Gradually add the dry mixture to the wet ingredients in three parts, alternating with the milk. Start and finish with the dry ingredients, mixing gently until just combined.

6. Pour the batter into the prepared pan, smoothing the top with a spatula. Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.

7. Allow the cake to cool in the pan for 10 minutes. After that, transfer it to a wire rack to cool completely before slicing and serving. Enjoy!
