🧾 Ingredients

Crust

• 24 Oreo cookies

• ¼ cup unsalted butter, melted

Filling

• 2 cups semi-sweet chocolate chips

• ¾ cup heavy cream, at room temperature (separated)

    • 24 oz (680 g) cream cheese, at room temperature

    • 1½ cups granulated sugar

    • ¼ cup Dutch-processed cocoa powder

    • 5 large eggs, at room temperature

    • 1 teaspoon vanilla extract

Chocolate Ganache

    • 1½ cups semisweet chocolate chips

    • ¾ cup heavy cream

👩‍🍳 Instructions

1. Preheat the oven to 325°F (165°C). Lightly grease a 9-inch springform pan or line the bottom with parchment paper.

2. Prepare the crust:

Process the Oreo cookies in a food processor until finely ground.

Mix in the melted butter until evenly combined.

Press firmly into the pan and up the sides.

3. Bake the crust for 10 minutes. Remove and let cool completely.

(Optional: Wrap the pan in foil or place a baking sheet underneath.)

4. Melt the chocolate:

Combine the chocolate chips and ¼ cup cream in a microwave-safe bowl.

Heat in 20-second intervals, stirring until smooth. Set aside to cool slightly.

 5. Prepare the filling:

Beat the cream cheese until smooth and creamy.

Add the sugar and cocoa powder; beat until fully incorporated.

Add the eggs one at a time, mixing well after each addition.

Add the remaining ½ cup of cream.

6. Gently fold in the chocolate mixture until smooth and homogeneous.

Add the vanilla extract.

7. Combine:

Pour the mixture over the cooled dough and smooth the top.

 8. Bake for about 70 minutes, until the edges are set and the center jiggles slightly.

(Place a baking sheet on the bottom rack to catch drips.)

    9. Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

    10. Prepare the ganache:

Heat the chocolate chips and cream in 20-second intervals until smooth.

11. Final step:

Pour the ganache over the chilled cheesecake. Let stand for 15 minutes, then slice and serve.
