Semolina Pastizzu with Salted Butter Caramelized Apples
(For a loaf pan)
Ingredients
- Pastizzu:
- 70 g sugar
- 3 eggs
- 500 ml whole milk
- 4 tbsp fine wheat semolina
- Zest of 1 organic lemon
- 2 medium yellow apples
- 25 g salted butter
- Caramel:
- 120 g sugar
- 100 ml apple juice
Instructions
Preheat the oven to 180°C (350°F).
In a saucepan, bring the milk, sugar, and lemon zest to a boil. Add the semolina and cook over low heat, stirring constantly for about 10 minutes until thickened. Remove from heat and let cool slightly.
Peel the apples and cut them into small cubes. In a pan, melt the salted butter over low heat, add the apples and 1 tablespoon brown sugar, and let them caramelize for a few minutes, stirring gently.
Prepare the caramel: in a saucepan, combine the apple juice and sugar and cook over low heat until the caramel turns golden.
Pour the caramel into the bottom of the loaf pan, coating the sides as well.
In a bowl, beat the eggs and add them to the cooled semolina mixture. Whisk until smooth, then fold in the caramelized apples.
Pour the mixture into the mold over the caramel.
Place the mold in a water bath and bake for 45 minutes.
Remove from the oven, let cool slightly, then unmold.
