No-Bake Peanut Butter Crunch Bars
The Lineup
- Peanut Butter: 3/4 cup (creamy or crunchy)
- Melted Butter: 3/4 cup (180ml)
- Biscuits: 2 cups crushed (Marie, Digestive, or Graham Crackers)
- Sweetener: 1 cup icing sugar
- Flavor: 1 tsp vanilla essence
- Topping: 1 cup chopped chocolate + 1 tsp butter
- Texture: 1/2 cup chopped peanuts (or preferred nuts)
Preparation Steps
Cream the Base: In a large mixing bowl, combine the melted butter, icing sugar, peanut butter, and vanilla. Whisk or beat the mixture until it reaches a smooth, creamy consistency.
Add the Crunch: Fold in the crushed biscuits and chopped nuts. Stir thoroughly until the dry ingredients are fully coated and the mixture is uniform.
Press into Pan: Transfer the mixture into a baking pan lined with parchment paper. Use a spatula or the back of a spoon to press it down firmly into an even layer.
Melt the Topping: Combine the chocolate and 1 tsp of butter. Melt them using a microwave (in 30-second bursts) or a double boiler.
Pro Tip: If using a double boiler, ensure the bottom of your bowl doesn't touch the simmering water to prevent the chocolate from seizing.
Finish & Chill: Pour the smooth chocolate over the peanut butter base. Refrigerate for at least 2 hours, or until the chocolate is firm. Slice into squares and enjoy!
Quick Tips for Success
Biscuit Choice: Stick to "hard" biscuits like Marie or Digestives. Avoid soft or cake-like cookies, as they won't provide the necessary structure.
Chocolate Variety: Feel free to swap between dark, milk, or even semi-sweet chocolate chips depending on your preferred sweetness level.
