Here’s a simple, moist Lemon Loaf Cake recipe 🍋🍰

Lemon Loaf Cake

Ingredients 

 • 1½ cups all-purpose flour

 • 1 tsp baking powder

 • ¼ tsp salt

 • ½ cup butter (soft)

 • 1 cup sugar

 • 2 eggs

 • ½ cup milk (or yogurt for extra moisture)

 • Zest of 2 lemons

 • ¼ cup fresh lemon juice

 • 1 tsp vanilla extract

Method

 1. Preheat oven to 170°C (340°F). Grease and line a loaf pan.

 2. In a bowl, mix flour, baking powder, and salt. Set aside.

 3. Cream butter and sugar until light and fluffy.

 4. Add eggs one at a time, mixing well.

 5. Stir in lemon zest, lemon juice, and vanilla.

 6. Add dry ingredients alternately with milk, starting and ending with flour.

 7. Pour batter into pan and level.

 8. Bake for 45–55 minutes or until a toothpick comes out clean.

 9. Cool for 10 minutes, then remove from pan.
