Indian Coconut Chocolate Cake

Ingredients

For the Cake:

    • 2 eggs

    • 1 cup sugar

    • 1 cup milk

    • 1 cup flour

    • 2 tablespoons cocoa

    • 1 packet vanilla

    • 1 packet baking powder

For Soaking the Cake:

    • 1 cup milk

Coconut Layer:

    • 1 packet whipped cream

    • 1.5 teaspoons milk

    • 2.5 cups coconut

 • 1 heaping tablespoon powdered sugar

For the Chocolate Ganache:

    • 200 ml liquid cream

    • 160 g chocolate (100 g milk chocolate, 60 g dark chocolate)

Preparation

 1. Prepare the Cake:

    • Line the bottom of a 10-inch springform pan with parchment paper.

    • Beat the eggs and sugar until white. Add the milk.

    • Sift in the flour, cocoa, vanilla, and baking powder, and beat until smooth.

 • Pour the cake batter into the pan and bake in a preheated 170°C oven for 25–30 minutes. Let cool.

2. Coconut Layer:

    • Whip the heavy cream with milk.

    • Add the coconut and powdered sugar and mix.

 3. Ganache Preparation:

    • Heat the cream until it reaches boiling point.

    • Add the chocolate, stir until melted, and leave to cool at room temperature.

 4. Assembling the Cake:

    • Once the cake has cooled, soak it with milk.

    • Spread the coconut mixture on top and smooth it out.

    • Pour the cooled ganache over the cake.

 5. Resting and Serving:

    • Let the cake rest in the refrigerator for 3–4 hours.

    • Decorate as desired and serve. 🌿
