Blackberry Chocolate Layer Cake
Rich, dark chocolate cake layered with chocolate cream, blackberry filling, and finished with a glossy chocolate ganache
🍫 Ingredients
🔹 Chocolate Cake
- 2 cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups sugar
- 2 tsp baking powder
- 1½ tsp baking soda
- ½ tsp salt
- 2 eggs
- 1 cup milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup hot water or hot coffee
🔹 Chocolate Cream Filling
- 200 g dark chocolate
- 200 ml heavy cream
- 1 tbsp butter
🔹 Blackberry Filling
- 1½ cups blackberries (fresh or frozen)
- ¼ cup sugar
- 1 tsp lemon juice
- 1 tsp cornstarch + 2 tbsp water
🔹 Chocolate Ganache Topping
- 200 g dark chocolate
- 200 ml hot heavy cream
👩🍳 Instructions
1️⃣ Make the Chocolate Cake
Preheat oven to 170°C / 340°F
Mix all dry ingredients together
Add eggs, milk, oil, and vanilla
Slowly pour in hot water or coffee
Pour batter into a lined cake pan
Bake 35–40 minutes
Cool completely and slice into 3 layers
2️⃣ Prepare the Blackberry Filling
Cook blackberries, sugar, and lemon juice over medium heat
Once berries soften, add cornstarch mixture
Stir until thickened
Let cool completely
3️⃣ Prepare the Chocolate Cream
Heat the cream until warm (not boiling)
Add chopped chocolate and butter
Stir until smooth and glossy
4️⃣ Assemble the Cake

5️⃣ Ganache & Decoration
Pour hot cream over chopped chocolate
Stir until smooth
Pour ganache over the cake, letting it drip down the sides
Decorate with chocolate swirls and fresh blackberries
✨ Tips
Chill the cake 4 hours before serving for best texture
Coffee enhances the chocolate flavor without tasting like coffee
You can substitute blackberries with raspberries or cherries
