Vanilla Raisin Loaf
Ingredients
• 2 cups (250g) all-purpose flour
• 1½ tsp baking powder
• ¼ tsp salt
• ½ cup (115g) unsalted butter, softened
• ¾ cup (150g) sugar
• 2 large eggs
• 1 tsp vanilla extract
• ½ cup (120ml) milk
• ½ cup (80g) raisins (soaked in warm water for 10 minutes and drained)
Instructions
In a bowl, whisk flour, baking powder, and salt.
In another large bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
Gradually add the dry ingredients alternately with milk, mixing until just combined.
Fold in the raisins gently.
Pour the batter into a greased and lined loaf pan (8x4 inch).
Bake in a preheated oven at 175°C (350°F) for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
