Sugar-Free Peanut Butter Cookies

Ingredients:

• 1 cup natural peanut butter 🥜

• 1/4 cup erythritol (or your preferred sugar substitute) 🍬

• 1 large egg 🥚

• 1 teaspoon vanilla extract 🍦

• 1/2 teaspoon baking soda 🧁

• 1/4 teaspoon salt 🧂

• 1/4 cup chopped peanuts (optional, for extra crunch) 

Directions:

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix the Ingredients: In a mixing bowl, combine the natural peanut butter, erythritol, egg, vanilla extract, baking soda, and salt. Stir until the mixture is smooth and well combined. If using, fold in the chopped peanuts for added texture.

Shape the Cookies: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Flatten the Cookies: Gently press each cookie with the back of a fork to create a crisscross pattern on top.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The cookies will firm up as they cool.
