Rice Barfi | Soft & Tasty Homemade Mithai
A delicious, melt-in-the-mouth barfi made from roasted rice, caramel, and milk—perfect for festive celebrations!
Ingredients:
- Raw rice – 1 cup
- Almonds – 1 tbsp
- Cashew nuts – 1 tbsp
- Sugar – 3/4 cup
- Hot water – 1/2 cup
- Cardamom powder – a pinch
- Milk – 1 cup
- Ghee – 1 tbsp
Instructions:
Prepare Rice Powder
Wash the raw rice well and strain the water completely.
Roast the rice on low flame for 5–7 minutes until aromatic.
Add almonds and cashews; roast for 2 minutes.
Let the mixture cool completely.
Grind into a fine powder and set aside.
Make Caramel Syrup
In a pan, add 3/4 cup sugar and heat until it caramelizes.
Carefully add 1/2 cup hot water and cook until the caramel fully dissolves.
Cook Barfi Mixture
Add a pinch of cardamom powder and 1 cup milk to the caramel syrup.
Gradually add the prepared rice powder while stirring continuously.
Cook on low flame until the milk is fully absorbed.
Add 1 tbsp ghee and cook until the mixture leaves the sides of the pan.
Set the Barfi
Transfer the mixture into a 6-inch greased pan.
Spread it evenly and flatten the top using a spatula.
Let it rest for 2 hours or until fully set.
Cut into pieces and enjoy your soft rice barfi!
