Pistachio Cheesecake 🥜🍰
A creamy, nutty dessert that combines the rich flavor of cream cheese with the delightful crunch of pistachios, perfect for any occasion!
Ingredients:
For the crust:
• 200 g digestive or speculoos biscuits
• 100 g melted butter
For the filling:
• 400 g cream cheese (such as Philadelphia)
• 100 g powdered sugar
• 200 ml heavy cream, well chilled
• 100 g unsalted pistachios (chopped or whole for decoration)
• 1 tbsp vanilla extract
Directions:
Prepare the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, crush the biscuits into fine crumbs. Combine the crumbs with melted butter until well mixed. Press the mixture firmly into the bottom of a springform pan to form an even layer. Bake for 10 minutes, then allow to cool.
Make the Filling: In a large mixing bowl, beat the cream cheese and powdered sugar together until smooth and creamy. Add the vanilla extract and mix until combined.
Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Add the Pistachios: Fold in the chopped pistachios, reserving a few for decoration on top of the cheesecake.
Assemble the Cheesecake: Pour the filling over the cooled crust in the springform pan, smoothing the top with a spatula. Refrigerate for at least 4 hours or overnight until set.
Garnish and Serve: Once set, carefully remove the cheesecake from the springform pan. Top with whole pistachios for decoration. Slice and serve chilled, enjoying the creamy, nutty flavors!
