Green Matcha Cake

Ingredients:
- For the Cake:
- 1 3/4 cups all-purpose flour
- 2 tbsp matcha green tea powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup + 2 tbsp granulated sugar
- 2 large eggs
- 3/4 cup sour cream
- 1 1/2 tsp vanilla extract
- 1/2 tsp vinegar
- 1/2 cup buttermilk
- 1/2 tsp almond extract
- For the Frosting:
- 10 tbsp unsalted butter, softened
- 10 oz cream cheese, softened
- 1/4 cup melted white chocolate, cooled
- 1 1/2 tsp vanilla extract
- 5 cups powdered sugar
- Fresh raspberries for layering and decoration
Directions:
Preheat the oven: Set to 350F (175C). Line and grease four 6-inch cake pans.
Mix Dry Ingredients: Whisk together flour, matcha powder, baking powder, baking soda, and salt.
Cream the Butter and Sugar: Beat softened butter and sugar until light and fluffy. Add eggs one at a time.
Add Wet Ingredients: Mix in sour cream, vanilla extract, and vinegar.
Combine Dry and Wet Ingredients: Gradually add the dry mixture and buttermilk alternately. Stir in the almond extract.
Bake: Divide batter between pans and bake for 25-27 minutes. Let cakes cool completely.
Prepare Frosting: Beat butter, cream cheese, and vanilla extract together until smooth. Pour in cooled melted white chocolate, then gradually add powdered sugar.
Assemble the Cake: Layer the cakes with frosting and raspberries. Frost the outside and decorate with additional raspberries for a finishing touch.
