Chocolate Chip Cookie Dough Brownie Bomb Cake

Ingredients:

  • For the Brownies:

  • 2 boxes fudge brownie mix (plus ingredients called for on the packages)

  • For the Cookie Dough:

  • 1 cup (2 sticks) butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1/4 cup heavy cream or milk
  • 1 Tbsp vanilla extract
  • 1 tsp salt
  • 2 cups all-purpose flour
  • 1½ cups semi-sweet chocolate chips

  • For the Ganache & Topping:

  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 1 cup miniature chocolate chips

Directions:

Prepare Brownies: Preheat oven to 350°F. Grease two 9" springform pans and line with parchment. Prepare brownie mix according to package instructions, divide batter between pans, and bake for 30-35 minutes. Allow to cool completely.

Make Cookie Dough: Beat butter, sugars, cream, and vanilla until smooth. Mix in flour and salt, then fold in chocolate chips.

Assemble Cake: Place one brownie layer upside down on a plate, spread cookie dough evenly on top, then cover with the second brownie layer.

Add Ganache: Microwave chocolate chips and cream for 30 seconds, stir until smooth, and pour over the cake, letting it drip down the sides. Sprinkle with mini chocolate chips.

Chill and Serve: Store covered in the fridge for up to 3 days or at room temperature for about a day.
