Chocolate Caramel Cake
Ingredients
- 3 cups cake flour
- 1 cup white sugar
- 1 cup brown sugar
- 3/4 cup cocoa powder
- 1 cup amasi or buttermilk
- 1 cup hot coffee ( 2tsp coffee + hot water)
- 1/2 cup vegetable oil
- 3 eggs
- 1 tsp vanilla essence
- 2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- FROSTING
- 200g dark chocolate
- 1 cup cream cheese(room temperature)
- 1/3 cup cocoa powder
- 1 cup powdered sugar (icing sugar)
- 1/2 cup salted caramel
- 1 cup whipping or heavy cream(very cold )
Instructions
1. Preheat the oven to 180 Degrees Celsius.
2 .In a large bowl sift in flour, cocoa powder, baking powder, bicarbonate of soda, sugar , and salt .
3. Add amasi or buttermilk, oil, and vanilla and mix well . Then add the eggs one at a time and mix well.
4. Pour in the hot coffee. Mix until the mixture is smooth but don’t over mix .
5. Divide the mixture into the 3 pans lined with parchment paper .
6. Bake in a preheated oven for 25 to 30 minutes. (Baking time depends on your oven).
Let the cakes cool completely before you frost them .
7. After the cakes have cooled off layer them on a cake stand and apply the frosting . Add the caramel sauce in between each cake sponge.
INSTRUCTIONS FOR THE FROSTING
1. Melt the chocolate in a microwave or over hot water . Let it cool slightly but keep it warm.
2. In a large bowl mix cream cheese, powdered sugar, and cocoa powder until creamy and smooth. (Sift in the cocoa powder and powdered sugar).
3. Mix in the warm melted chocolate.
4. Add heavy or whipping cream. Mix until smooth.
5. Let it chill for 20 minutes then spread on the cake.
